“This is our first year of growing this variety. When we were looking for potatoes for growing in the spring, we did not hear about this variety. This is a fairly new potato; there is not much sown area in North America, ”said Katie Cyre of Pike Lake Farms.
Ms. Cyrus shared stories about friends with diabetes who came to dinner and were unable to eat the potatoes offered. Potatoes, as a rule, contain a large amount of starch and carbohydrates, which cause rapid bursts of sugar in the blood, which people with diabetes cannot easily cope with.
“There are a lot of people with diabetes in the North, so it would be useful here. I know that it will be difficult for me to refuse potatoes, ”said Cyrus.
Researchers crossed two old potato varieties to create Huckleberry Gold, and Kathy Cyre said his trials continued over the past 4 years.
While a specially cultivated potato variety may imply more detailed care, Cyrus said that cultivating a new variety follows the same pattern as for other varieties.
Studies have shown that Huckleberry Gold potatoes have a low glycemic index (ranking carbohydrates in foods as a measure of their effect on blood sugar) compared to conventional varieties.
Huckleberry Gold contains more antioxidants than Idaho Russet. Prior to receiving more detailed test results, the merits of Huckleberry Gold will be based on the promising words of the development team at the University of Montana.
